Copper cooking diffusers work on any burner except magnetic induction burners.
Growing up in an Italian family, cooking has always been a huge part of my life. My aunt, Joan Tucci, had a best-selling Italian cookbook, and my cousin, Stanley Tucci, has a few as well. Trust me, if you are serious about cooking, you need a copper cooking diffuser! These solid copper plates are made of pure domestic 14-gauge cold-rolled copper and are excellent conductors of heat.
Some benefits and uses include:
• Maintaining even temperatures while cooking. No more hot and cold spots!
• As a cooling plate for hotter items.
• Quickly thaw frozen items (place an ice cube on it for a small demonstration!)
• Minimize stirring needed for sauces, rice, or simmered dishes.
• Less burning, scorching, and sticking.
• Use on an outdoor grill for even cooking with pots or pans.
• Larger pans can be used on smaller burners.
• Maximize cooking area in cast iron pans! If you have Lodge cast iron pans and griddles like I do, you will typically have a 50-80 degree difference from the center to the outside of the pan. Our cooking diffuser reduces that variation down to 5 to 7 degrees!

Please read the use and care information below before purchasing:
• Safe for use with gas and electric cooktops. Will NOT work on magnetic induction cooktops.
• We suggest a maximum of medium-high heat when using on glass tops. Never slide across the glass. Place directly on the burner and remove by lifting once cooled.
• Do not cook food directly on the diffuser. Always use a pot or pan.
• Use caution when removing from the stovetop as copper will be hot.
• The diffuser will change color with use. This is normal and does not affect functionality. If desired, the plate may be polished with any copper cleaner, such as Bar Keeper’s Friend, and a sponge or Scotch Brite pad under warm water. Again, this is not necessary, as the copper is not coated and will naturally patina over time.
