We tested the heat differential from the sides to the middle before using the copper diffuser and found a staggering variation of 80 to 120 degrees. After using the copper cooking diffuser, that variation dropped to just about 20 degrees. It's a game changer for even cooking.
One thing to note is that these diffusers will darken, likely after the first use. Personally, I don't worry about it. But if you prefer to keep it looking shiny, you can always clean it with copper cleaner.
